CCTU GOVERNING COUNCIL APPOINTS A NEW ACTING PRO VICE-CHANCELLOR

 

A new Acting Pro Vice-Chancellor of the Cape Coast Technical University (CCTU) was appointed by the Governing Council of the University at an Emergency Meeting held on Thursday, August 21, 2025, at the Council Chamber, CCTU.

Professor Emmanuel Kwaw, a Professor of Food Science and Engineering at the Department of Hospitality Management, the current Dean of the School of Applied Sciences and Technology, and the Senior-Most Dean, is the new Acting Pro Vice-Chancellor of the University.

His appointment took effect on Thursday, August 21, 2025, and will end on Thursday, August 20, 2026, subject to review by the Governing Council, when a substantive Pro Vice-Chancellor is appointed. Prof. Kwaw took over the mantle of leadership from Professor Lawrence Atepor, the immediate past Dean of the School of Engineering.

Profile of Professor Emmanuel Kwaw

Professor Emmanuel Kwaw is a Food Scientist with a solid background in Food Science & Engineering. He has 15 years of Teaching experience at the tertiary level, with extensive involvement in designing new curricula in Food Science & Postharvest Technology and Hospitality Management.  His current role at Cape Coast Technical University (CCTU) involves the preparation and delivery of lectures and laboratory-based practical lessons across several disciplines (Food Science, Food Product Development, Sensory Analysis, Food Technology, Food Safety, Fermentation, Microbiology, Food processing, and Research Methodology).  He supervised over 100 Higher National Diploma and Bachelor of Technology candidates. Prof. Emmanuel Kwaw is also an external assessor to postgraduate candidates in many universities in Ghana.  He also serves as Programme Assessor for the Ghana Tertiary Education Commission.

Prof. Kwaw has held various positions at CCTU, which include Director Quality Assurance and Academic Planning, Founding Dean School of Applied Sciences and Technology, Dean School of Applied Sciences and Arts, and Head of Department – Hospitality Management. Prof. Kwaw is currently the Dean School of Applied Sciences and Technology.

He has pivotal participation in the scientific field and has published over 47 peer-reviewed articles in top-tier journals and 7 book chapters. His contribution to Food Science & Technology has earned him an appointment as an Honorary Executive Member of the Ghana Association of Food Scientists and Technologists (GhAFoST) and the Vice President of the African Society of Food Science and Technology (ASoFoST). He is a reviewer for many Food Science Citation Indexed (SCI) Journals such as Food Chemistry, Journal of Food Science and Technology, Journal of Food Processing Engineering, Journal of Culinary Science and Technology, Journal of Food Measurement and Characterisation, Journal of Food Quality, Food Chemistry Advances, Cogent Food and Agriculture, among others. His scholarly works, which span across Fermentation Technology, Functional Foods, Food Chemistry, Food Processing, and Food Preservation, have been translational because it is integrative, holistic, and cross-sectional. 

Prof. Kwaw has a wealth of scientific and managerial qualities that enable him to collaborate with others locally and internationally. His knowledge and rich experience in relating to and dealing with people, acquired through various extra-curricular activities and collaborations, have developed in him team-playing abilities, a focused attitude, and excellent communication and interpersonal skills. He believes that teamwork and good leadership at the workplace and in the outside world can help solve most scientific and administrative challenges and improve standards.
